HEALTHY AND YUMMY DINING RECIPE ON A DIET

Eating healthy can definitely become a chore when you have to think of your next diet compliant meal. I would recommend creating a food timetable that is easy to navigate through; I also would recommend you include this as a dinner option on that time table, Mustard and Rosemary Chicken with Potato as a side dish. INGREDIENTS

4 chicken breasts

1 tablespoon wholegrain mustard

1 tablespoon fresh lemon juice

1 tablespoon olive oil

1 tablespoon rosemary leaves (fresh, finely chopped + sprigs, to serve)

1 clove garlic (minced)

1 1/4 pounds baby potatoes (quartered)

8 3/4 ounces baby spinach leaves

1 1/2 tablespoons butter

1 lemon (cut into wedges)

 

DIRECTIONS

  1. Coat chicken with mustard, lemon juice, oil, chopped rosemary and garlic. Heat a grill plate over high heat. Working in batches, cook chicken for 6-8 mins, until cooked through and browned.
  2. Meanwhile, boil or steam potatoes until just tender. Drain. Toss with spinach and butter, until spinach starts to wilt and butter melts.
  3. Serve chicken breasts with potatoes and lemon wedges. Garnish with rosemary sprigs.
